With a unique petal-like, artichoke-inspired steel structure and vibrant blend of eccentric interior finishes, Jaleo, the new restaurant concept by José Andrés located in Disney Springs®, immerses guests in an unparalleled dining experience. The team placed new foundations and constructed a round steel structure with sloped curtain walls and a new roof. Consisting of 42 “petal” steel frames, the roof gives the restaurant a one-of-a-kind look. The interior buildout covered dining areas on two levels, indoor and outdoor, as well as several bars throughout.

Work onsite brought together 33 trades working adjacent to the 150 shopping, dining and entertainment venues of Disney Springs®. In navigating the logistics of the project, the team needed to skillfully coordinate trades to work within the project site without disruption to active surrounding facilities. Weekly coordination meetings were held with trade contractors, as well as daily meetings with Disney stakeholders to ensure that active neighboring businesses were not impeded by the construction of Jaleo.

The unique geometry of Jaleo’s steel structure required collaboration between PCL, the consultants and steelworkers to confirm the structure’s constructability for the client. We introduced the stakeholders to BlueBeam Studio software so they could work together in real-time. The software provided a centralized location for storing shop drawings in the Cloud and the ability to track markups and comments. Using the software expedited responses to design RFIs while confirming the constructability of the structure. The collaboration between PCL and the project designers and consultants ultimately allowed the construction team to deliver the artichoke-inspired, instantly iconic structure to a satisfied client.
